Instructions

1. Spoon ice cream into 8 mounds on bottom of parchment-lined pan, using 2 tsp. ice cream for each mound. Freeze 30 min.
2. Place cookies, top sides down, on parchment-covered rimmed baking sheet; spread with preserves.
3. Top 8 cookies with ice cream; cover with remaining cookies, preserves sides down, to make 8 ice cream sandwiches. Press top cookies gently into ice cream to secure.
4. Combine sprinkles in small bowl. Roll edges of ice cream sandwiches in sprinkles. Return to baking sheet.

Variation

Prepare using your favorite flavor of light ice cream or frozen yogurt.
